This is a Caol Ila 2000 vintage 7 year old single cask release that was bottled by Kilchoman distillery as part of their four edition series – MacBeatha Islay Single Cask Range.
Distilled in October 2000 this was matured for 7 years in a single hogshead before being bottled in May 2008 at a natural cask strength of 60.9%.

Nose: Signature Caol Ila harmony of fresh sea spray and cake batter. Emerging dunnage funk. Vanilla ice cream. Driftwood. Distant campfire. Lemon meringue. Gentle brine.
Palate: Cauldron of chilli and ginger. Burnt citrus. Green fruits. Chalk. Peach rings. Caramel brittle. Cigar ash.
Finish: Salted fish. Chimney smoke. Tangy sauce. Peppercorns. Orange rind. Flame grilled green peppers. Lemongrass.
