This 1989 vintage Caol Ila was bottled by Signatory as part of their The Un-Chill Filtered Collection in 2001.

The whisky was distilled on the 18th December 1989 before being matured in a refill Sherry Butt for 11 years and was bottled on the 30th July 2001 at 46% abv.

Our Tasting Notes:

Nose: Clean smoke. Anchovies. Dry peat. Brine. Chestnuts.

Palate: Excellent balance of salt and smoke. Spearmint. Ash. Stick of liquorice.

Finish: Burnt citrus and soot to finish. Further brine notes.
